That's what I want to do. Buy a car and drive it until it dies. It needs to last LONG after I've paid it off. I do love Toyotas. Our dream car is the Outback, but it's a bit out of our price range. We'll see..

My suggestion (though I don't own a car) would be a Toyota Yaris hatchback. My friend just bought a Yaris sedan and it's compact but the space inside is used very well so it's comfy and doesn't feel cramped. Part of that is that it's taller than most compact cars so tall people have enough headroom. They get great gas mileage because they're small and they're Toyota, and the hatchback option seems perfect for you. As far as I know they're really safe, and they're definitely comfy for road trips. I am green with envy over my friend's Yaris sedan. It's the cutest thing I've ever seen, is really comfy and roomy for a small car, gets great gas mileage, and is still kind of sporty and fun. Definitely a car for the long term. Good luck with the car shopping!
I have a 4Runner (seems to be lots of Toyotas out there), althought I think that's not going to be as gas-friendly as the others mentioned. It's got the room for everything we're (I'm) always lugging, and it rides really well. You'd never know it was an SUV (and it's not one of those monster Suburban-types). I LOVE it! It's a really sexy truck, IMO, and it's fast and powerful (it better be with the way I drive), has tight handling and responsiveness, and I'm getting another one as soon as the little guy is out of pre-school. I probably fill it up every week or so, depending on where I'm going. I could stretch it further, but I love driving, and still sometimes take the long way home to get a few extra minutes (or to avoid the idiot in front of me going less than the speed limit with his signal on and constantly braking).
I have a Mitsubishi Outlander (which you already know) and I've a love affair with this thing. I drive it every chance I get. It's a joy to look at, it hauls things well, though gas mileage sux when you run the A/C.
From your list, I like the Outback and the Matrix. Ooh, car shopping! YAY!
