I just loved my time in Kyushu - we went to Fukuoka, and Beppu, Yufuin and Oita. Down there you can also climb Mt Aso (although I didn't get too).
Osaka was one of my favourite places. Just a complete party town. from there you can do a day trip to Koya-san as well, which is just filled with Buddhist temples. It was pretty interesting.
Okinawa has always appealed to me (although we didn't go) partly because it is where they all go in the animes and mangas!
I think that everywhere can be an adventure though :-)
Randon comment, came across your journal from "lifeinjapan". I was going to be a JET this year but things came up...do you mind if I try and live Japan vicariously a little through you?
Also, have you been to the oldest bath houses in Japan? Dogo Onsen in Matsuyama. Worth the travelling time to get there. I think Miyazaki based the bath house from "Spritited Away" off the same place (if you like those sort of films).
