newer post!
waiting for awesomest awesome layered lasagna to be cooked. its teasing me with its aroma.
we usually make our own sauce from tomato paste. usually D makes it. this time i did, a bit nervously, since its been a long while since i made successful sauce. D tasted it and pronounced it better than his! yay! woot woot!
feeling successful :)

So I just discovered a storebought sauce that tastes almost the same as the one I make from scratch! It's a shakshuka base y Yachin.

Aside from that, lasagne is yummy!!! Enjoy!
I made my pizza quiche for dinner tonight :-)

Pizza Quiche is basically shortcrust pastry (2 parts flour to 1 part butter pulled together by as little ice-water as possible), with a layer of cheddar cheese spread over it, then a layer of tomato sauce with sauteed or roaster onions (I used the onions from a batch of mushrooms I'd just roasted because I didn't want to add mushrooms to the actual quiche), then topped with whatever cheese you have around. I used cheddar, mozzarella and gouda, and then topped it with shredded parmesan, and it came out amazing!

It's also a lot less work than it sounds because other than cutting the pastry together, there's no real work involved. The rest is all just putting it together.
And if you're being lazy like I was last night cuz I didn't have other ingredients, you can use readymade sauce, otherwise if you want to be fancier or put more effort in, you can make the sauce from scratch.

I made it up about three years ago for the cast party when I was in Sound of Music.

mmmmm. i wish i had more confidence dealing with flour. im afraid of it and anything to do with it other than adding a pinch to thicken a soup or sauce. when i used to make quiches with crust i used to use batzek alim.

Hm, I always make sauce from tomato paste, but I never think about it much - I use almost equal parts paste and water (slightly less water), garlic powder, and whatever other spices I have on hand that seem appropriate. I am not so picky I guess.

i put in disgusting amounts of: (in decreasing order) garlic, oregano, basil, black pepper, dill. with some salt. and then added water until it looked about right. it could have done with a bit more salt, but meh, one can always add more salt

When I actually make the effort to make pasta sauce I always fry up onions to start, then add tomato paste, garlic, spices, and most importantly, wine (rather than water).
If I need there to be a large amount or I want to have plenty left over, I'll also use crushed tomatoes.

Occasionally I'll really go crazy and make it completely from scratch, with fresh tomatoes and all... ;-)

mm onions.... i used to do that, but we havent had the ability to fry anything in our house until this week, and we've been making a lot of sauces by simple mixing.
when you use wine, do you cook it all in a saucepan? i, and others who eat my food, are alcohol-sensitive...
i have made complete from scratch sauce before. wow its long and involved and if it stayed good longer than a week i would totally make a ton and store it for the whole season. or month. hm, would it stay good in the freezer i wonder? *ponders the concept*

Ah I am so lazy with tomato sauce. I just dump tomato paste in a pan and add spices till it smells yummy :P if I'm feeling really expressive I'll add in chopped onions, garlic, mushrooms, tomatoes. But usually I don't go beyond onions XD

that's why i was nervous!! i've discovered, though, that the more spices put in, the better it tastes. even if it looks like theres equal amounts spice and tomato paste. also, heating it a bit helps the spices dissolve better. I once complained that sauce made with tomato paste tastes 'dark' and was told that in that case, i should use crushed tomatoes. i've since gotten used to the paste taste, but the crushed tomatoes are another idea of how to make better tasting sauces
