Apple & White Cheddar tart

I have hit the jackpot, my friends.

friggasfemme has gone Friggaswoman/Cancerian/generous-wife craaaazy today and I couldn't be happier or fatter. She has today, I am not joking, made an apple and white cheddar tart, pita bread from scratch, a crusty white French loaf, and is right now as I type in the kitchen making homemade tortillas.

You should. You really really should. "Milder apples, stronger cheddar is the secret," says friggasfemme, "because apples tend to seem stronger as they cook and cheese gets milder."

Oh yum.

Wouldn't it be wonderful to make a bunch of mini-tarts all with different fruit/cheese combos?

That would be an excellent idea. A lot of stone fruit seem to do well with cheese and luckily they're in season.
