To change the settings back to what you want from opening in quicktime to normal, right-click on the file (.psd, .jpg, what have you), go to "Open with..." and go to the bottom option, "Choose Program...". Scroll through the programs until you find Photoshop, click on the program, and hit the checkbox on the bottom that says something like "Always open with this program" and you're set. :3
Oh ick. D: It might be settings within quicktime, then. I'm not using a completely new and updated version of quicktime, but you can mess with the settings within quicktime. Hopefully this still applies in the new version you have, too. :)
Go to edit, to preferences, and then to quicktime preferences. In my version there's a dropdown box of things to modify. Find the file type association, and click "file types". There's more checkboxes to use for it, so uncheck the ones you don't want quicktime opening or being associated with quicktime.
