i need ideas

i have 6 large eggs that need using up in the very near future.
any ideas?

i'm reluctant to make cake as i still have quite a large chnk of chocolate cake left from birthday - which makes me also unsure about chocolate brownies (they would use up 5 of the eggs tho, hmmm)

o and it can't be overly difficult or time consuming as i am supposed to be

Pancakes freeze *really* well. Alternatively you could cook egg fried rice, spaghetti carbonara, quiche, more cake (I'm sure you could find volunteers to eat it). If they've been kept in the fridge it's ok to use eggs after the use by date. Just check them in a jug of water. If they sink then they're still fine. I wouldn't recommend it for mousse or tiramisu, but if you're cooking them it shouldn't be a problem.

Egg custard is very easy. Just beat together eggs, sugar and milk, plus vanilla if you want; then put in some kind of caserol dish, put this in another dish (I use a roasting tin) with ~1" water in the bottom. Moderatly hot oven for about an hour.

Could also do bread and butter pudding, though requires more effort.

Should add that if you are feeling really keen you can blind bake pastry cases first and make egg custards.

if i had a food processor i'd make this, but i only have a hand blender and pastry by hand is far too time consuming

As in a mortar cannon... you drop eggs in and it fires them a long distance at something.
