Life has been crazy these past two weeks and it looks to be even crazier still. I think I'm going to postpone my fitness challenge because A) with everything going on, I'm finding myself putting myself on the back burner and B) with everything going on, trying to squeeze extra hours into the day is making this more stressful instead of fun ( Read more... )

Egg muffins are amazing. I was living off them last year.

Also good is if you put a piece of ham in a muffin tray, crack an egg in it and a sprinkle of cheese. Easy and delcious.

Lifting still counts! Better to take a step back instead of burning out, I think. Man, I need to get back in my routine!

Kittiessss! They can really do no wrong. Though they can get pretty rambunctious at night.

As for writing, I find that's always the way of it! I don't know what it is about brain chemistry that makes it work that way, but it is very unhelpful! I usually keep a notebook with me so at least I can write parts of them down on coffee or lunch breaks and then hopefully go back to them later when there's more time. That's the theory anyway...

I feel like I've made muffins like this, but then when I try to picture when I would have eaten them it all comes up blank! Someone at work saw something online about baking an egg in half-of an avocado with a little spot scooped out for it. It looked AMAZING but I have yet to try it out. Egg + avocado... I can't see how it could go wrong!

I put everything down in notebooks. But it still works the same way, I always have stories swirling around until I sit down to write.

Haven't done the egg muffins with bacon. We do shirred eggs. Ham lined ramekin and egg mixed with a tblsp of heavy whipping cream in the middle. Bake at 425 for 20ish minutes.
