Yes, the colour depends on the acidity/alkaline level of the soil - you can actually buy a 'colourant fluid' to add to the water, which switches blue to pink or pink to blue, depending on soil type.
Those lilies are beautiful! I have some lovely asiatic lilies in orange and white, but the magpies love to behead them, just for fun. I don't really mind if birds are causing some damage for nestbuilding or such, but the magpies are really nasty, they just bite off all the heads and pull the stems out and leave it all lying around. *Grmpf*
