Well... I have been "aggressively reintroducing" milk and related products into my diet. The results so far are... Hrm. Not clear. I will have to discuss with my doctor.

I'm so envious for your doing dairy overload!

So, do you have to wait a number of days, dairy and potato free, before the potato test?

As for potatoes at every meal ... it wouldn't be so bad if one had the luxury of going out for breakfast every day -- hash browns, yum! Doing it otherwise I can see as a challenge, especially if you don't want them to always be greasy potatoes (potato chips, french fries, etc.). Then again, I suppose this would be a good way to get french fry cravings out of your system for a while. ;)

Here's a couple of potato options you might not have thought of: potato gnocci and potato bread (I don't recall the manufacturer of the latter, but it's good bread). It might not be enough to completely meet your potato threshold, but it could at least help.

No, I don't need to worry about going a number of days milk/potato free before I re-introduce potatoes. I may stop dairy and then eat potatoes by themselves.. I haven't decided yet.

Yeah, potato gnocci is a good option. I may make potato soup (tho that requires dairy... Sigh.

Actually, I have a leek and potato soup recipe that only uses a tiny bit of butter, but you could just as easily use olive oil. I'll try to remember to type it up and send it to you before I live to Belane, even though that might be after your potato days are over.

In case you're interested before then, though, it's in Twelve Months of Monastery Soups. I highly, highly recommend this book. In fact, if you only ever buy one book about soup (and obviously if you love soup) this should be it. The recipes are easy, but there's an amazing variety. They're organized by season, to emphasize seasonal ingredients.

(I'm glad that I decided to link to this for you, because I hadn't realized that the author wrote 2 other books. I'm iffy about salads, but I definitely want to get From a Monastery Kitchen.)
