If we sign up to pinch hit, is that a strong enough reason to request a week 3 post date for that piece?

Yes, you will be guaranteed a late posting date for a pinch hit.

How long do you suspect that us pinch hitters will have to complete our pieces?

We'll be contacting pinch hitters as needed and can guarantee them a late posting date in the schedule. So it really depends on when other authors in the challenge drop out.
