It's basically how well something insulates. A simple example is 12 inches of insulation insulates better than 4 inches of the same type of insulation, so the 12 inches has a higher R-value. When you get more technical about it though, 12 inches of insulation does not insulate 8 times better than the 4 inches. Also, different materials have different R-values. It gets complicated.

Hooray for creepy attics! Your's looks like the one at Dan's mom's house (minus the insulation). Ours is so spooky that I have never gone up there in the 6 years I've lived here.
