German Oven Pancake

1 cup flour
1 cup milk
4 large eggs
dash of salt

round baking dish

mix all ingredients and preheat oven to 425.
melt some butter in baking dish (in the preheating oven).
pour batter into baking dish, and bake until the top puffs waaaaaay up, and is slightly golden brown.

Serve immediately with salsa & grape jelly or brown sugar & butter.

Also pasta with butter & parm cheese makes for an excellent easy dish, add a salad and some garlic bread and he'll love you forever.

i'm not sure he would count that last one as dinner, but i can speak from experience and say it is delicious.

the problem is that i hate couscous and brown rice. and don't like lentils terribly much . . . which is why i am not vegetarian.

yes, burritos are a good solution . . .

Well I am one of those lazy vegetarians who doesn't cook much, therefore I can't really recommend anything right off the top of my head. But, go here:

excellent side dish: broccoli & cauliflower bake. Cut up a bunch of broccoli & cauliflower. Put it in a baking pan. Bake at 350 for about 45 mins. Take it out, pour some sort of vinaigrette on it--anything you like, as long as there's oil and balsalmic or wine vinegar in it--then put it back and bake it for another 10 minutes or so. It's good cold, too, with a little more fresh dressing, and some chopped parsley and other salad fixin's.

that sounds delish. we already have broccoli (though i think it is past its peak) and i can go buy cauliflower . . . hmm, but what to serve with it?
