I just went to get a roll of toilet paper from a under-the-sink cabinet in the main bathroom, and found it shredded. Haven't actually seen a mouse, or any droppings, but assuming that's the cause.
Anyone have any tips on dealing with mice other than getting traps and cleaning?

Soak a cotton ball with pure peppermint oil and place near openings, in cabinets, under counters and near garbage cans. Mice do not like the smell of peppermint and will avoid the home and continue traveling. Replace the cotton balls every few weeks for as long as rodents are noticeable. Oil of cloves and mint sprigs work as well. These oils will eliminate flies as well.
Make a paste of boric acid, flour and water. Mix 1 tbsp. of boric acid and 1/2 cup of flour with just enough water to make a thick paste. Roll the paste into small balls and place in the corner of cabinets, under the sink, near openings into the home and behind appliances. This eliminates roaches as well. Do not place the paste anywhere children or pets can access them as boric acid is a poison.

We've used boric acid in there before, for a bug infestation, behind the baseboards. Though we do have dogs, so I try to avoid it. Might be worth doing again.

And heh. Been asking the dogs why they love to chase squirrels and rabbits but apparently haven't noticed the mice.
