i attempted to make stuffed chicken breasts tonite.. they looked like hell, but were delicious! i didnt have toothpicks, so i tried to use kabob skewers. so they kinda fell apart. but! super tasty. i stuffed em with portabellos, ricotta, parm, asiago, spinach, garlic and shallots. then made a white wine sauce for the top. super good!
1) use toothpicks, not kabob skewers and 2) pound out the chicken as thinnnnnn as you can. i didnt pound mine out as well as i should have so it took longer to cook. actually what i ended up doing was cooking the kinda stuffed breasts, then making the sauce, then putting the chicken back in the sauce for a bit, covering them with the extra cheese/mushroom stuffing, covering and letting the cheese melt down. it worked out pretty well.

ooohh....myyyy...gooood! i want one! that sounds so amazing :) i have never attempted anything stuffed yet, it intimidates me!
