I was incredibly nervous about being knocked out, but in retrospect there was absolutely no way that I would have wanted to be awake for that. It was the first time I had been put under for anything, so I wasnt sure what to expect, but I went under quickly and came out of it without any ill effects. I'd still be nervous about getting put under again, but the first time is always the worst in terms of anxiety.

I'm not sure how much else you want to know about the wisdom teeth removal ordeal, but I have other suggestions of things should you need them.

I didn't know you had an option O_o. Really, all I remember is getting into the chair, them putting a needle in my arm, giving me the laughing gas (I actully sarted giggling) and being half awake as they tried started moving me to a different room.
Your mouth will be dry as anything. Don't try to swollow, don't spit. It won't hurt when you first wake up, but once the pain stuff wears off...not fun. If possible, have someone run out as soon as possible to pick up whatever prescription is written out for you.
As for food. The best kind is what can slide down your throat with as little effort as possible. Um...Any questions? Sorry if I was babbling.

...I'm getting cavities filled Wednesday morning and I wish I could be knocked out for that, so I'm probably not the best person to give advice on the subject. >.< I guess there are always risks, though - if you're prone to anxiety attacks, I'd highly recommend considering it anyways.

Oh, and I recommend pudding as a staple food after. (I've never had my wisdom teeth out, but I had some oral surgery in middle school and chocolate pudding was all I could eat.)

Good luck, and I hope the whole thing somehow turns out to be painless.
