Cooking Woe

So I'm trying new things in the kitchen this week. I don't like to cook, so I scouted meals that boast a 20 minute or less prep time on the internet and came up with several recipes last week. I decided to make them all this week. Which okay, was probably too ambitiousness ( Read more... )

I happen to be fond of meatloaf and have a great recipe for it.

Good for you for trying new things! I've found that casseroles are easiest for me to make. I'm so not a cook and get frustrated with most other things. Plus casseroles provide several meals in one.

I've never tried a casserole because I've been limited to meals with 1-2 servings. Chris will not under any circumstances eat leftovers. So I always felt like a lot of food was going to go to waste. So we eat a lot of the pasta meals that have meat and vegetables included. However, I'm sick of it and it's not as good for you so I'm looking for a change.

I don't like the dishes (I know, you're shocked) that come with cooking though so I don't know if I'll stick with it or not. I found an interesting baked chicken recipe that I'm about to eat that was super easy and definitely more the style I was looking for.

That's annoying that Chris refuses to eat leftovers. That's all we eat for lunch. You could always make a casserole and freeze the leftovers. Then you could either serve it for dinner in a month or thaw it and take it for lunch. Would Chris eat leftovers if it had been a long enough period between when you first made it and when you served it again?

I think it's the issue of reheated food more than repeated food. I'm not sure why he's so opposed, but his mother tells me he's always hated leftovers.
