I'm seeking your favorite brownie recipes. Preferably for thick, moist and yummy brownies! The richer the chocolate taste, the better! I will be making them today and want them good for tomorrow.

Do you have a kitchen scale? My favorite brownie formula is from my baking textbook, but all quantities are given by weight, and I don't have the spoons to convert to volume.

Oo, please post! I have a scale even if the OP does not, and I'm always looking for good baking recipes by weight since they're so much more reliable.

2 oz unsweetened chocolate
2 oz bittersweet "
10 oz butter
-------------------
7 oz eggs
9 oz sugar
0.25 tsp salt
1.50 tsp vanilla
-------------------
4 oz bread flour

4 oz walnuts or pecans (I never put these in, but there ya go)

1) Melt the chocolates and butter in a double boiler. Let cool to room temp.

2) Mix eggs, sugar, salt, vanilla together until well-blended, but do not whip.

3) Blend in the chocolate mixture.

4) Sift the flour and fold in.

Now, I usually make these with a cheesecake swirl and bacon. For the cheesecake swirl:

8 oz cream cheese
2 oz sugar
0.25 tsp vanilla
1 egg yolk

Work the cream cheese with a mixer until smooth and creamy. Add sugar and vanilla and mix until smooth. Add egg yolk and blend in. Drop on top of brownie batter in pools and swirl with a toothpick/knife/whatever.

2 Cups Sugar (or 1 1/2 cups white sugar plus 1/2 cup brown sugar)
1 1/2 Cups all-purpose flour
1/2 Cup cocoa (unsweetened)
1 1/2 teaspoons salt
1 teaspoon baking powder
1 Cup vegetable oil (yes, one whole cup)
3 eggs
3 Tablespoons light corn syrup (or you can use honey, it's really good too)
1 teaspoon vanilla extract
1 cup chopped nuts (optional, or you can use chocolate or pb chips or m&ms or whatever)

Preheat oven to 350 degrees Farenheit. Grease a 9x9x2 inch pan. In a large bowl, combine sugar, flour, cocoa, salt and baking powder. In a smaller bowl, combine oil, eggs, corn syrup and vanilla. Add the wet ingredients to the dry ingredients in the large bowl until combined. Fold in nuts (or whatever if using). Bake for 35-45 minutes. Don't over bake, if the edges look too dry but the middle looks oozy, go ahead and take it out. The middle might be oozy but it'll be yummy!!!

These are from allrecipes.com. They are called Brooke's Best Bombshell Brownies. We love them. Better to undercook a bit than overcook them. Makes about 24 servings.

Ingredients

* 1 cup butter, melted
* 3 cups white sugar
* 1 tablespoon vanilla extract
* 4 eggs
* 1 1/2 cups all-purpose flour
* 1 cup unsweetened cocoa powder
* 1 teaspoon salt
* 1 cup semisweet chocolate chips

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
2. Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
3. Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
4. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.
