Tried and true lemon bars + Peanut butter cookies

A friend of mine requested that I make him lemon bars as payment for him driving me around/keeping me company while I studied this week. I've never made them before (I don't even think I've eaten them before) so I was hoping you guys could point me towards a good recipe and any tips or tricks you may have ( Read more... )

I don't have a lemon bar recipe, but I do make these cookies a lot (easy AND gluten free!) and I've changed them a bit for the better!

2c PB
1c white sugar
1c brown sugar
2 eggs
1/2tsp baking soda

And sometimes I add a sprinkle of pumpkin pie spice and a handful of chocolate chips.

Well hm. I don't have a recipe, I tend to fondle my food until it feels right and then I go with it. But if she's already got the crust I'd assume you could pan cook some apples in butter with either cornstarch or tapioca flour with a little water and sprinkle brown and white sugars and cinnamon. Put it in the pie crust and bake it per directions on the crust and brush the top with either an egg wash for a nice brown finish. :)

Annnnd now I have to make pie. :)

I like baking from scratch, it's fun! He said a box mix was fine but that's not entertainment for me, hehe.

My grandmother was well known for her baking, and I did manage to get some of her most memorable recipes written down before she died. This happens to be one of my favorites.

Lemon Squares

1 cup butter

2 cups sifted flour

½ cup confectioners' (powdered) sugar

2 cups sugar

4 tbsp flour

1 tsp baking powder

4 eggs

6 tbsp lemon juice

pinch of salt

Preheat to 350

Melt butter; add sifted flour and confectioners' sugar. Mix well and pack into an ungreased 9 x 13 pan. Bake 15 minutes. Mix together sugar, flour and baking powder. Add eggs, one at a time, lemon juice and salt. Pour this mixture over hot crust and return to oven and bake 25-30 minutes. Cool and cut into small squares. Sprinkle confectioners' sugar on top. Yields 4 dozen.
