Bah! When they were open, the Union Stockyards were a real tourist draw. Why anyone would want to see it is beyond me... the videos I've seen of the process is really kinda disturbing.

But that's not where I wanted to go. Sausage can be made of any part. The sausage I'm talking about is probably less random parts than, say, a hot dog. I've seen sausage made (on tv)... it's not so horrific. But, it was Iron Chef, so they didn't case it.
