The whole 'Claire being a lesbian' thing comes from some article saying she will share "a room and maybe more" with her new college room mate and the Behind the Eclipse guys saying they plan to introduce a bi/gay character at some point... right?

I don't know, it seems like jumping the gun a bit to assume that Claire will now be a lesbian just from those little tidbits. Unless I missed something.

Even if Claire did hook up with a chick next season (which doesn't seem likely to me), it wouldn't make her a lesbian, it would make her bisexual since lesbians just don't want to boink their uncles

That's right. Lyndsey Fonseca. She had a small cameo in the premiere of Vol. 2 but it wasn't speaking. She was one of the cheerleaders. Her character's name was April.
