Well done! I'm so happy things are working out for you! And not at all sympathetic about your schedule. (I know, I'm the one who agreed to teach school full-time. I knew the drill.)

My schedule is actually fairly decent, Wednesdays notwithstanding.
You likely wouldn't be out of your depth for any of my classes--they're all intro level. Chem, bio, French, and (intermediate) algebra. Yes, algebra. I took stats at Stanford, and I need to brush up on my math skills, badly--my math background in HS was pitiful (they didn't offer much out in the sticks), so I never got far and really need the refresher.
In intro chem and bio, I'm fairly certain I'm not going to learn anything I don't already know--my chem/bio teacher in HS was actually fantastic (and the only one of my HS teachers to properly prep me for college, imho)--but I need the credits on record in order to get into microbiology and anatomy/physiology, etc.
And once upon a time, you were fluent in French, so I'm certain you could handle that, too. I actually have a decent amount of practical French, but have never taken any classes. So getting the foundation down is really kind of fun.
I never took much bio, so I may not be much help, there. Not that you'll need it, of course! But, if you do need a little assistance in any other area, I'm here. Or on Skype! (Same SN.)

I just posted about some of my own difficulties. But the classes today were cool. I'm going to have mostly clinicals, which start Sep 1. Until then, we're getting prepped to go out into the community. We'll be going to nursing homes, screening HeadStart kids, and even doing a health screening at a Hutterite Colony.
