I was gonna suggest Unitarianism, actually. Mellow, liberal, and it seems like a good way to get some comparative-religion shtuffs going on, too.
Buddhism is great but most of what I've encountered that passes for it in America is...not so much. If you were seriously interested in this option I would recommend finding a traditional community.
Most reputable pagan (of the neo-/Wiccan/witchy variety, anyway) groups don't allow kids, with some exception made under some circumstances for the children of members. The one local exception I can think of is such a political morass right now that I'd recommend against it for that reason alone.
In short, I think you've found about the best option you're going to, given your goals.
I should note for the record that Judaism is a lot more than the Old Testament. If you don't read the commentaries and learn about the traditions of family and education, you're missing most of the point.
And no one sacrifices animals until the Temple is reestablished in Jerusalem. That being the case, as far as I'm concerned, the Muslims can keep the holy mount; the Dome of the Rock is gorgeous right where it is.
Good point about Judaism's tradition of education. I always thought of Jews as some of the most educated people on the planet and is what I find so deeply appealing about Judaism.
As for the temple I completely forgot about the rebuilding of the temple. Now I remember reading about evangelicals going on about how rebuilding the temple is essential and how they deeply support Israel. Although they do it for their own twisted reasons, sign of the end times. So ya I'm with you, leave things as they are.
