My Dad and I did the Denver route when we moved down to Phoenix in the 80s. It is very scenic. You might also look into a quick side trip to Four Corners since you would be within 25 miles.

The big problem with it being really scenic is that I'd be tempted to keep stopping to take pictures. :)

We took the Oklahoma route a few years ago when we delivered a van to Phoenix. Yeah, not real scenic.
