I promised this to pants-of-doom a while ago, and have my recipe book out. Attendees of nicholay's halloween party may remember this.

Brief note: "t" means teaspoon. "T" means tablespoon. Not hard, but I wouldn't recommend mixing them up.

They are mostly cheap and easy, and also delicious. You would love the chicken piquant.

Dude, I live in Minnesota. There is one kind of enchilada sauce at most groceries. If you're lucky. This is getting better, but it ain't great, yet.

Actually, the Sopa Seca recipe is an "end of the week" recipe, and just isn't that specific. Feel like beans? Add some beans. Don't have co-jack? Use something else (although I really wouldn't recommend gorgonzola in most situations). Etc. Use whatever you like and have on hand. I usually add pinto beans in lieu of some of the tortillas, and at least double the peppers.

They are delicious. Also, a whole pound of cooked lentils will feed you a while. I usually eat the on top of brown rice.
