If there's a book you really want to read, but it hasn't been written yet, then you must write it.

This one is great XDD

All my stories and plots usually mutate on their own and I still have no idea how comes I can handle them in the end x_x

Sometimes I wish the plots that do come into my head would evolve quickly, so I won't get new ideas halfway through the story and have to change some stuff in the beginning. This is not without it's enjoyable side but it can also be a bit of a bother. ^^

I change the story only if I haven't started to write it. If it's something I know it's gonna be long, I write down the plot and the "timeline" first. Then I think about the story and if I want to change something, I do it in my notes.

It's a good way of mapping out the story. I really should try it sometime.

About plot--when I write, I always make sure to have a beginning and an end, even if it's just an ending scene or a vague idea of how the characters will be. I try to keep them not too long, because otherwise I'm afraid sub-plots would creep in and become unmanageable. >_>

Ah, sub-plots. Another bane of my existence. *hangs head in shame* I'm the sort that usually lets the story flow along, but I would like to know beforehand how the major conflict would resolve itself. If not, things will get out of hand, as you say.
