In KH1 it was Tink, she was the best summon EVAR, in KH2 though, I think I used Stitch the most of all the summons, and my favorite D-Link has to be Mickey

Atlantica, Agrabah and Beast's Castle, for exactly the reasons you think. I'm a sucker for my favorite Disney movies. And yes, I liked both versions of Atlantica, even in KH2. It was silly, okay? BBS adds Olympus Coliseum, finally, oh my god, it was just so cute and amusing! I loved the Trio of Derp |D
As for my favorite original world, I'd have to say Hollow Bastion/Radiant Garden.
