I'm not much into origami, but it would seem to me that if there's a wise man (which you didn't mention) you could just modify that to make Joseph and the shepherd. As for the donkey, have you though of maybe seeing i you could make a horse with shorter legs? Just a thought.

I've actually experimented a bit with modifying the Mary to make a Joseph... Seems strange, but I think it works better than modifying the wise man. What I came up with isn't the best, but I guess it'll work in the absence of anything else. Good idea for the donkey, though -- I'll have to take a look at that.
