3 cups vanilla wafers, ground
1 c ground (or finely chopped) toasted pecans
1 c confectioners' sugar + extra for coating the cookies
3 TBS light corn syrup (I use honey)
1/3 c bourbon/rum
Mix all the ingredients together. Pinch off bite-sized pieces of dough and roll into smooth balls. Sprinkle a little confectioners' sugar on a plate and roll the cookies in it, store in a container with a tight-sealing lid.
My notes: this is a really sweet recipe, I think you could cut the sugar by at least a quarter cup. And the dough is incredibly sticky - the recipe recommends dusting your hands with powdered sugar (!), but I use a little butter instead. And these are really good rolled in a 50:50 mix of sugar and unsweetened cocoa...
