In my experience, yeah, they're pretty good at shifting themselves to times when people aren't around, but that appears to be dependent on them knowing what people are. I was up in the remote mountains of Leadville and found a bunch of beaver ponds, and was all super excited to actually see one of them... and then it swam right up to me and stuck its head out of the water to try to figure out what I was.
