Nick has always suffered from a bit of a ugly duck syndrome and was kind of amazed he was able to land a catch like Juliette (even if it didn't last), so when Monroe starts showing an interest (making him dinner, fussing over him, etc.), he's kind of wondering what the hell is going on because Monroe is awesome and why would he want him?

Big damn bonuses for Nick blushing whenever Monroe pays him a compliment because the poor guy doesn't have a clue how hot he is.

Later Eddie will trace his realization back to that conversation and the soft maroon scarf in his hands, back to the lingering scent of chocolate and peppermint wafting out of his kitchen.

He doesn’t figure it out right away though, not until they interview one too many suspects who flirt outrageously with Nick, who seems completely unfazed by the attention.

“What was her problem? People these days have no sense of propriety.” The woman had been practically drooling on Nick. She probably would have, if Eddie hadn’t glared her into submission. He can be scary when he wants to be ( ... )

“Probably for all the same reasons that Juliette likes you!”

Nick scoffs at him. “What, you’ve got a soft spot for maladjusted cops with attachment issues too?”

“Well…yeah. And I like you because you’re smart,” Eddie says, and Nick doesn’t dispute that; Eddie knows how much pride Nick takes in being able to do his job so well. “You’re strong-”

“Compared to you, I’m nothing.”

“Compared to me most humans are nothing. And strength manifests in more aspects than just the physical.”

“Don’t feed me that spiritual crap tonight; I’m not in the mood for it.”

“You’re strong and smart and funny and gorgeous and I like you. I haven’t been teasing you-okay, maybe I have been a little bit-but only because you’re so damn cute when you’re flustered. You look really pretty when you blush ( ... )

This is wonderful. Monroe's trying to slowly woo Nick, and Nick not getting that he's serious about this.
Also 'But he doesn't just want Nick now. He wants Nick tomorrow. He wants Nick to come over for dinner, wants to take him out to nice restaurants and make him blush in front of waiters, he wants to hold Nick's hand in public and show him off.'

OP--I missed the part of the prompt about Nick's relationship with Juliette being over, and just made it an open relationship--so sorry!
