For 14 Valentines

This is a super-quick recipe that has a hot, fresh dinner on the table in literally ten minutes.


Vegetarian Egg Drop Soup

1 can of vegetable broth + 1 1/2 cups water OR 3 cups of homemade vegetable broth
1 egg
At least 1 of the following, preferably 2:

1/2 cup corn kernels, frozen or fresh
1/2 cup peas, frozen or fresh
1/2 cup chopped okra, frozen or fresh
1/2 cup frozen soup vegetables
Thaw okra if using frozen okra. Heat broth on the stove in a pot that holds at least 4 cups to a boil. Break one egg into a cup or bowl and scramble. Drop vegetables into broth. 1-2 minutes later or when the broth returns to a boil, whichever comes first, drop the scrambled egg into the broth and stir vigorously with a fork. Soon (in about 1-2 minutes) the egg will turn into thin, solid ribbons in the soup. Turn off the heat and allow to heat to serving temperature.

Serve immediately, this soup does not keep or freeze.

Makes 2 large servings or 3-4 starter sized servings.

Note on cleanup

Immediately fill the pot with water after removing soup, to keep bits of egg from sticking too much to the pot. Cleanup is made even easier if you simmer the water in the pot on low for a little while, disolving the stuck-on egg a bit and facilitating cleaning.
