Accordian Layout in InDesign

For a booklet with an accordian style folding, would you set it up in InDesign or would this be a page imposition thing (BookletIE or whatever)?

For me, it would depend on how many panels. If it's only 3-5 per side, I'd just do it flat in InDesign.

I have 8, which still seems do-able. For folding is it necessary to just tell the printer or have the document marked in some way?

It's like the Apple product manuals, which is what I was asked to make it look like. Right now I'm just setting guides but I'm wondering if I need something else.
