Mayonnaise is fairly stable, though - at least until devoured - which proves that oil/water emulsions can hold quite well. The trick is in the stirring!

And yes, the trick is in the stirring--they were both a bit tired of the constant stirring required in trying to meld two very strong personalities, and parted amicably. Thanks so much for your comment!
