I'm pretty sure the only vampire novel I've ever read it Interview With A Vampire.

Someone already recommended it but the Historian would be really good if you're going to include Dracula in your project. It's by Elizabeth Kostova.

Kim Harrison has a series called the Rachel Morgan series (or the Hollows) that has a vampire as one of the main characters.

The Darkangel Trilogy by Meredith Ann Pierce is a really interesting and dark take on the mythos. It's YA but doesn't read like it.

Some others:
The Mercy Thompson Series by Patricia Briggs
13 Bullets by David Wellington
The Smoke Trilogy by Tanya Huff
Blood the Last Vampire by Mamor Oshi
Anno-Dracula by Kim Newman
The Last Vampire by Patricia Rosemor
Children of the Night by Mercedes Lackey
Fledgling: A Novel by Octavia E. Butler
Vampyrrhic by Simon Clark
Renfield: A Tale of Madness by Kyle Garrett and Galen Showman
Vampire Huntress Legends by L.A. Banks
The Saint-Germain Chronicles by Chelsea Quinn Yarbro
