It's more like "life force", really. If you have even the tiniest bit of spiritual power ( and I'm figuring most, if not all Imports have it ) in Bleach canon you can resist having your soul completely consumed. Sooo, otherwise think of vampires, I suppose? Only without the biting, or blood loss.

In canon it's called "Gonzui" ( yeah idek ) and when the Decima Espada Yammy uses it, he pretty much killed about 20 people. The only person with enough spiritual power to resist was still pretty bad off. She passed out, basically.

Now, supposedly they don't have to kill people when they use it, but Arrancar are kind of like uber-hollows, so where a base level hollow would consume a free-roaming soul, or eat make a living person drop dead for no apparent reason Arrancar could technically take part of a Living Soul's energy, and leave the soul intact. Eventually the soul will recover.

So, for the sake of CR in the game, NPCs can be sacrificed, but player characters can surivive. Basically.
