Looks yummy! Do white eggplants have the same taste as purple ones? I just bought one for the first time a couple of weeks ago and then forgot about it. It still feels firm but the rind is now completely yellow!
Different types of eggplant may have slightly different flavors, but it's not extreme; in general I find the white ones taste about the same as the purple ones. But if the skin's turned yellow it may mean that the fruit's over-ripe; if you cut it and find that it's all seeds, it might not be as tasty. [I do go ahead and cook them anyway - I love eggplant! - but if there are lots of seeds that have hardened up, I try to get as many out as I can; otherwise it's "crunchy eggplant", and can be bitter too.]
