CANJUN SHRIMP PASTA
2-3 cups sliced fresh mushrooms
1 lb of peeled uncooked shrimp
1 white onion chopped
2 good handfuls of snap peas
1/2 c sundried tomatoes chopped
2-3 tbs of cajun seasoning
2 tbs crushed garlic
S&P to taste
1/2 c light sour cream
1 tbs corn starch
1 2/3 c chicken broth
1 lb pasta
freshly grated parmesan cheese
sprinkle shrimp with cajun seasoning and put aside.
saute onion and mushrooms with 1 tbs of crushed garlic and salt to taste. scoop out of pan and put aside.
put shrimp, sundried tomatoes, and pea pods with 1 tbs of crushed garlic into pan. cook until pink. scoop out and put with onion and mushrooms.
add 2/3 c of chicken broth to the pan and simmer down until half the amount. mix corn starch and sour cream together. add 1 c of chicken broth. add that mix to the simmered down broth in pan. simmer until thickened, S&P to taste. add shrimp and veggies mix until heated through. mix with cooked pasta and a sprinkling of the parmesan cheese.
note: i used about 2tbs of cajun seasoning and 1 tbs of a hot seasoning called Slap Ya Mama.
