There was some discussion about this on the CONLANG mailing list a year or two ago, and again more recently. The Language Creation Society has talked about doing an anthology of short to middling-length texts in constructed languages, the text itself along with a few pages of grammmar and lexicon and pointers to where more information about the language can be found. I'll dig up the URLs and get back to you.
For models of composition, check out the many constructed language grammars online, especially the ones that feign the language is a real, obscure natural langauge -- I think Carsten Becker's Ayeri grammar and Dirk Elzinga's Tepa grammar might be the kind of thing you're looking for.
