1 tbs cardamom seeds (pod husks removed)
One 2-inch stick of cinnamon
1 tsp black cumin seeds (can substitute regular comin seeds)
1 tsp whole cloves
1 tsp black peppercorns
1/4 of an average size nutmeg
Place all ingredients in a clean electric coffee or espresso grinder and run for 30-40 seconds until the spices are finely ground. Store in a small jar with a tight-fitting lid and keep away from heat and sunshine.

Garam Masala from Ground Spices (yields 1/4 cup)
Mix together:
1 tbs ground cumin seed
1 tbs ground corriander seed
2 tsp ground black pepper
2 tsp peeled ground cardamom pods
1 tsp ground cinnamon
1 tsp ground cloves
