I was originally going to tick Topher, (because he's so much win and he's one of my most favourite Whedonverse characters of all time...) but his death was actually kind of beautiful, and somewhat necessary? I don't know. I liked how he went out. I love him so much.
I was then going to say Fred (Angel), but her death led to Illyria, who is just balls out insanely awesome, so, as horrible as it sounds, I wouldn't save Fred because we wouldn't have Illyria otherwise.
I finally settled on Anya. I love her to bits (err... no pun intended?), and even though she went out in a pretty awesome fashion too, I wish she survived and was still alive in the Season 8 comics. I miss her humour. She got some of the greatest lines in the show :(
AND she had the best role in the musical. We were going to put it on in high school... and I got the role as Anya... but then we had to change the musical to Footloose :\

I saw Serenity before Firefly - my friend took me to see it in Gold Class (do you have that there? Cinemas with just 15 or so seats, and the chairs recline, and you can order (yummy) food to quietly appear beside you?) - and so this was the first I saw it. I adored Wash from the first moment. Then...
I...am not really a fan of Joss Whedon. I watch his stuff and I just don't really get the same degree of OMG THAT WAS AMAZING that other people seem to get. Firefly was a genius concept but I'm kinda glad that it was just a tiny series because shows like Buffy and Angel (IMHO) just got boring, and now that he's stretching them on and on with comics...eh.
Also, he doesn't really seem to understand character arcs that well? I mean, his gimmick is to kill off characters unexpectedly, but all that means to me is that that character never got to reach the end of their arc and so the audience is left a little unsatisfied :S Maybe I'm reading too much into it, but I've never really enjoyed most of Whedon's stuff, sooo. Yeah. *helpless shrug*
I didn't like Angel at all, and I still haven't watched all of Buffy because she annoys me *ducks hate mail*
But Dr Horrible, Firefly/Serenity and most of Dollhouse are just epically fantastic imho <3
And I get what you mean with his characters not ending their arcs - but I like that he does it. It's not believable in other things when there's a huge war and no one dies. At least in his, terrible things happen. I think he does understand character arcs though, as there's usually always hints that it's going to happen - like in Dr Horrible there's a fan mail from 'Dead, not Sleeping'... and I totally forget the line in Serenity which means OH WELL, I GET TO WATCH IT AGAIN ;D
But yeah, give Dollhouse a go, maybe? ^^ I'm not the best Buffy/Angel fan at all - my favourite episodes are the dorky ones, like the Something Blue (wedding) one and the musical, in Buffy... I stopped watching when the sister came in.
My first impulse would have been to go with Tara. Because, well, TARA. But her death is part of a greater storyline, and so are most of the others, so I left those alone. Wash it is, because I love him and Zoe. <3
I still want to know what Zoe did after - I've read the comics where she leaves Firefly, or she finds out she's pregnant or whatever - but I want JOSS to saaaay. Poor Zoe :(
