Frequently deviled eggs, as they've been getting a very good reception, though they are a little fussy. Eggs, mayonaise, prepared mustard (I like it with whole mustard seeds), cider vinegar, honey, scallions or capers, paprika. I had some recently with wasabi and pickled ginger that were delicious, but I haven't tried that variation myself yet.
Quiche, a main dish that does well at room temperature. Recent ones have been mushroom-and-spinach, and ham-and-broccoli, both with cheddar cheese. Single pie crust, ~3 eggs and 3/4 to 1 cup liquid dairy, any filling you like with most of the water cooked out. (Mushrooms and spinach need to be pretty well cooked before assembling the quiche.)
Sesame or peanut noodles, also because they do reasonably at room temperature, and because if I make them for just me I will eat them all with alarming speed.. At the bottom of this post there's a rough cut at a recipe for peanut noodles with chicken; re-reading I suspect the dressing wants to be increased a bit. For sesame noodles, for one pound
