A zombie's just a dead body that can still walk around and attack people. Set them on fire after you kill them and the won't get back up later as a faster Crimson Head zombie when you go back through that area to get to the save point.
Ah wait, that's just in R*sident Evil, and those are virus zombies. I don't know anything about voodoo zombies.

The kind you mentioned, voodoo, are created with fragments of souls controlled by the voodoo caster and inserted into a corpse. The corpse becomes animate, and is at the will of the caster. It is similar to the necromancy variety, although, unlike necromancy, a voodoo zombie requires the body be biologically active, thous it must have an intact corpse, unlike necromancy, which can make do with parts, or a skeleton. Furthermore-

It's not much, really. I only had about a bookcase worth of zombie material; most of it showed up from the world mine is linked to. I know the most about necromantic zombies, given my studies of magic I may have something here about the kind you're asking about... As you said before, a large portion of my personal notebooks showed up in my room...
As for the flamethrower question, that's a human device that, as the name suggest, shoots flames when used. It works well against voodoo variety since the flames break down the muscle tissue required for movement. However, it doesn't break them down right away, so for a good minute or so, instead of having a regular zombie after you, it's a zombie on fire. Recommended dispatch of voodoo zombies is by crushing or removing the head.

I don't think that such weapon existed in my world. Neither did zombies....thankfully.
