Vine Leaves

Apr 21, 2011 10:55

This might be a dumb question but can any grape leaves be used for cooking? I'm thinking of trying to grow some hardy grapes & I love stuffed vine leaves. If I can use the leaves from any grape vine it's a win-win as far as I'm concerned!

Check out the grape cuttings website I posted about earlier. At least one of those varieties IS used for cooking.
BTW: Any grape leaves used for food had better be organic ones.

You can in theory use any grape leaves, but the best ones will be from a vine of the varieties specifically cultivated for their leaves, and from the first leaves of spring.

For later-season leaves, you will be happier if you brine them first to soften them up a bit, because just the steaming process of cooking them will not break up the toughness in the leaves enough.
