When the weather gives you rain, make biscuits

The weather has been appalling today: strong wind, heavy showers and black skies. Good day to do some baking then! A few days ago, I'd randomly thought about some biscuits I'd made a few times which were always seriously yummy. Those look lovely! We have not baked anything for a while, because the oven tends to heat up the entire house. But it looks like something to try when the weather cools again.

Oh, I know. I really should have gone and got the proper butter. I hope they keep okay, gluten-free cakes go dry within a day or two, I'm not sure what it will be like for biscuits.

I'd have thought the soft one would be better for biccies actually - its years since I used stork but I don't remember using the block for such things.

It says on the wrapper that it's better for pastry and biscuits while the tub one says it's better for cakes. I presume it's because cakes generally start off by creaming butter so softer is better there, while pastry is rubbed in so you need it firmer. These biscuits need the butter and sugar creaming so I suppose the softer one worked okay there. Going off the fact that I needed to add so much extra flour because the dough was too soft, I thought perhaps the block would have stopped that happening.
