My weekend was full of some very good food, all made by my own fair hands.

Saturday's tea was baked peppers with baby jacket potatoes marinaded in a mixed herb oil, viz:

It was really yummy! Considering it has so few ingredients and barely anything to do to make it, you wouldn't think it would be quite as tasty as it is.

The torte was a shame but I'll just have to keep trying until I get it right ;) Oh, the hardship!

they all look pretty darn good if you ask me. Also that 'torte'.

The chicken-dish looks a bit dry though. I think i would add some sauce (or fruit or veggies) to it if it was mine to eat

The chicken was quite moist so it wasn't too bad. Like I said, I would have put peas and corn in the rice but I wasn't sure they'd be so nice cooked in coconut milk. I expected that the marinade would get reduced and used as a sauce as well so I was rather surprised that it wasn't. You don't want a sauce that's too strong though or you'd drown the flavour of the rice.

The peppers look as tasty asi thought from your description, funny you should say about cooking the rice in butter first,a friend at uni always did her rice that way (we awlays thought it was a bit odd to be honest..) so its intersting to see it in an actual recipe.

Shame about the torte not working, could be the eggs, or maybe cos milk chocolate has more non-cocoa elements in it, with it being flourless that might make more of a differnce than it would in a standard recipe maybe?

If you want the peppers recipe so you have proper quantities and cooking times, I posted it in a comment just up the page a bit.

There's an Old El Paso chicken and rice mix where you brown the chicken first, then add the rice and cook that for a minute or so before you add any water. It's always seemed very odd. I've got no idea what it does to the rice but there must be a reason for doing it that way.

I think it might have been the eggs because the mixture was definitely quite a bit runnier than it had been the previous time. That's the problem with eggs, they're not always the same size! If I make it again and it's very runny, I'll try adding some more ground almonds and see if that makes any difference.

hmm, give the rice a better flavour mayhap?

Eggs can be a pain thse days, much better when you bought a box of size 4 or whatever and they were all the same size, most of the time the medium eggs we buy are about the same size in the box and from box ot box but sometimes you reckon the chickens have been playing silly buggers and you've got eitehr an egg and a half or a half egg in there!

Could be, although with the coconut rice I'm not sure I would have noticed additional flavour on top of the coconut!

We tend to buy medium eggs, those Happy Egg Co ones although they are quite a decent size. My mother suggested weighing the eggs and making a note of that and how the torte came out, so then I can see whether the mixture is likely to need more almonds or not, depending on the previous results and weights.
