I'm feeling a little better than I felt yesterday. Jacob and I walked into town, picked up a paper and the mail. It was nice to get out. I think we'll be taking walks more often.

Anyone have a good, simple boneless pork chop recipe?

LOL! Inara is like that for her changes too. She loves her mobile and looking at the beads I hung off her curtains.

Orange Glazed Pork Chops:
4 pork chops, 3/4 inch thick
1 tbsp Olive Oil
salt and pepper
1/2 cup orange juice
2 tbsp brown sugar
2 tbsp orange marmalade
1 tbsp apple cider vinegar

In a large heavy skillet, brown pork chops on both sides in hot oil. Season pork chops with salt and pepper. Drain off excess fat. In a bowl, combine orange juice, brown sugar, marmalade, and vinegar. Pour over the pork chops. Cover and simmer on low heat for 35-45 minutes, or until pork chops are tender and glazed. Remove pork chops to a warm platter. Spoon sauce over chops. Serve with rice or potatoes.

Very yummy, and I'm not a huge pork fan! Hmmm... in fact I think I'll make these tonight!

The hardest part will be timing it so that Jacob is occupied while you brown the chops!

Sometimes he just babbles and babbles and babbles. I almost feel bad picking him up!

I make this one all the time, it's totally easy and looks fancy once you spoon the sauce over it. It's actually a weight watchers recipe so it's also healthy but men seem to like it.

1 teaspoon vegetable oil
Cooking Spray
1/2 c. chopped red onion
1/2 teaspoon thyme
1/2 teaspoon salt divided
4 boneless pork chops
1/3 cup seedless raspberry preserves (I use sugar free jelly)
2 TB balsamic vinegar
1/4 t pepper

Heat oil in nonstick skillet coated with cooking spray over medium-high heat till hot. Add onion; sauté 5 minutes. Combine thyme and 1/4 teaspoon salt; sprinkle over pork. Add pork to skillet; sauté 6 minutes on each side or until done. Remove pork from skillet; keep warm (it takes no time at all to make the sauce, you really don't need to worry about keeping the pork warm). Reduce heat to medium-low. Add 1/4 teaspoon salt, preserves, vinegar, and pepper, stirring constantly until the preserves melt. Spoon sauce over pork. Makes 4 servings.

On the first video, in the last four seconds, he makes the sad face lip quiver thing that breaks my heart!

Easy boneless pork chop recipe: Throw chops in casserole dish, dump creme of mushroom soup on top, put in oven at about 375, until pork is thoroughly cooked (about 40 minutes). Add side dishes.
