How did you wind up with an excess of buttermilk?

A prior miscalculation. Basically, I bought some specifically to make this soda bread, thought I'd use up the last of it for some more soda bread and some Irish sweet bread, wound up a quarter cup short, had to buy more buttermilk, and the store only had the half gallon size. Of which I only needed a quarter cup. So now I have nearly the whole thing swiftly approaching its expiration date and am frantically baking. That'll teach me. :P

The soda bread and that cinnamon bread are delicious, though, and all the rest looks delicious. There are worse fates.

Aah, I'd forgotten about that.

Judging from how good the recipes look, it may teach you to buy lots of extra buttermilk. ;)

Hopefully it will also teach me to have recipes ready and space out the baking. I'm going to be eating a lot of carbs for a few days. :P

I'll have to let you know how the cake turns out; if it's yummy, it would be a good thing to bring to potlucks, I think, and isn't too much trouble to bake. Except for that whole "separate eggs, whip whites until stiff peaks form" business. Grr.

Also, I've made both the soda bread and the cinnamon bread and wholeheartedly recommend them the next time you want to bake. So yummy.
