This is a great dollar-stretching, lots-of-leftovers meal and it tastes great too.

1 head green cabbage
2 lbs ground beef (could use other ground meats)
1 egg
3 garlic cloves, minced
1 onion, chopped
1 tsp dry basil
1 tsp dry oregano
1/2 tsp garlic powder
1/2 of a head of cauliflower

Roasted Broccoli and Tomatoes
This is an absolute staple for me personally, though the other eaters in my family are lukewarm about this dish. They tend not to like the taste or texture of the cherry tomatoes. The recipe should be easy to cut back in quantity if you wish. I like to make a large batch at once and use it in my packed lunches for work.

Red Cabbage Slaw
This four-ingredient recipe comes from a coworker, who himself originally picked it up in Germany. It’s dead simple but I love it with food cooked on the grill, everything from steak to hot dogs.
Red Cabbage Slaw
1/2 red cabbage, shredded
1/2 onion, chopped

Jerk Chicken Kebabs
I’ve tried jerk recipes before and never been a big fan, but this one really turned out great. I love that it uses a whole kilo of chicken breast - I prefer to cook with leftovers in mind.
Marinade:
1 onion, minced
6 green onions, minced
2 tsp dried thyme
1 tsp salt
2 tsp sugar
1 tsp allspice

Finally, a bedroom for ME!
I don’t have the receipt anymore, but I believe it was sometime in late 2006 that I bought some laminate flooring for my back bedroom. Oh it was pretty. Kind of a wide-plank dark wood with red undertones. Then the boxes of flooring were shoved into the back of a storage space under my back stairs and left there to cure slowly to a lovely finish.
