I don't know much about moving jaws but air vents can be put with a slot in or in front of the ears but honestly I wouldn't worry too much about ventilation since the eyes and mouth are good enough. here's a tutorial on follow me eyes. Https://www.youtube.com/watch?v=UmKryPPBKiA , Vinyl is a great material, especially marine vinyl but things like fleece and felt work well too.
