Roasted Pearl Onions in a Savory White Sauce!

We tried a few new dishes for our Christmas dinner with all the family. I ran across a recipe for Creamed Onions that looked interesting, and people liked it! There can be a bit of grudgework at the beginning, peeling all those little pearl onions, but otherwise it was pretty straightforward. I suppose a better title would be Roasted Pearl Onions

Now there's an interesting variant! I'm familiar with a similar dish that uses leeks rather than pearl onions. I'll seldom make any dish the same way twice, though - sometimes a more traditional roux, sometimes a cream soup powder.

I'd make a terrible restaurant chef. ^_^
